A glut of chillies

TMary starts with ...
What do you do with yours? I make jars of 'rocket fuel' based on a Charmaine Solomon (actually her husband Reuben's) recipe with ginger, garlic, vinegar and salt then put it in everything.

I always make a chilli oil.
or a paste for the base for laskas and Thai chili dish's. stirfrys etc.
in a robocoupe blitz two handfuls of chillis, seeds and all. bunch of corriander, stick lemon grass, zest and flesh of two limes, knob ginger, handful kaffir lime leaves. de veined and couple gloves garlic. olive oil. blitz too paste..

Mary, I just remove the seeds - if the chili is large enough to do that - and blitz in the food processor with some olive oil.

Then freeze in small jars. Has worked for me for many years.

Lucky you Mary, here in Brisbane, the fruit flies are back in force and you'd be hard pressed to find a chilli that is not stunted.

I see you have at least 3 varieties, a thai birds eye? a Broome (aussie) chilli and maybe the long one is a Sichuan type?

Ah, Hungarian hot wax - haven't seen them for many years. I remember Eden seeds used to have them, Phoenix too. I introduced my kids to chili by cooking with these, as they are quite mild.

My son is now a total chili freak and grows several types.

Mary, I tried for two years to grow Rocotto (seeds I got from you) with no success. They just didn't grow, went yellow and died. Other chillies were OK, so I have no idea.

Guess what Julie I can't grow Rocotto from seed either, though every other chilli seem to self seed. The fruit flies love it so I am quite discouraged about growing more now.

I'm afraid I don't know it all. But I can see that you have a tabasco (3rd type from left) and a bishop crown/lantern (last one on the 2nd row).

Not sure what is the 1st row, left one, could be an african birds eye (similar to tabasco) and my best guess for 2nd row first left is goat horn chilli.

Anyway, as it is quite cool now, chilli seeds are quite hard to geminate naturally - unless you have a mini heat mat - hot house. Very tempted to head to the nearest bunnings and get one but electricity and water don't mix too well and you are advised to buy some special circuit breaker.

Sorry, Brain, I should have put a coin or something to show scale. From top left are some TINY birds eyes (don't know what they're called really - the nursery just call them Thai chillies), then a mighty hot one I think from Mike? next to some yellow ones then normal birds eyes (my favourite) then a small Rocotto (normally bigger) then a Sorento next to the green Shishito.

Second row from left are some nameless hybrid (they are precocious) with the sharp ends (the curly one is just a cayenne, likewise the long one. Then the green ones are Shishito next to the last bell shaped very mild ones from Phil, I think.

vict if you want seeds please let me know so I can save them for you. I usually use them seeds and all :) The yellow ones are good for salsa especially when you don't want the red colour in your dish.

Brain, I have a small propagating mat which just fits inside a polystyrene box. I have had it so long I don't remember where it came from, but it sure is useful.I mostly use it to start early summer crops,but I germinate other plants too.

Not sure about your comment re electricity and water - this one is sealed and completely safe. It only has one setting, which I think is around blood heat - ideal.

good idea, I must investigate into the propagating mat, as I'm having a hard time trying to get a few chilli seed geminated.

And I'm very impressed with your collection Mary. My latest venture is the Yatsufusa (if only the seeds will geminate). Along, with the other birds eyes, they all belong to the capsicum frutescens family and I think it is the best eating chilli for my palate.

If all goes well, this time next year, I might have some seeds to share but so far not looking good :(

That hybrid with the scorpion tail is actually not too hot. In fact none of them are too hot (to me) except the dark one next to the yellow.
