They will germinate in Vaucluse. Plant them as you would any other seeds. Might be a tad late coming into the cooler months, but if you can keep them in a warm place they should be OK. They should germinate within 2 to 3 months. I've grown plenty of Black sapote from seed here, on the Central Coast, an hour north of Sydney. They don't need any special attention and are a reasonably quick grower. I don't know how tolerant they are to frost, I suspect you wouldn't get it there, like here.
I have a 4yo seedling over 3m tall after a prune back and this year has a lot of fruit forming around golf ball size now.
Grafting? I'm not having any sucess in that department, still learning it's secrets. Someone here might be able to tell all on grafting black sapotes.
