Hi all
What variety of standard olive tree is best to use to create the lollipop or mop top look? Similar to this photo? Any help would be greatly appreciated. Thanks

Looks a bit like it has long pointed bluish leaves, likely a Kalamata.
Other types have smaller compact leaves if you prefer that.
If you buy a grafted tree to turn into a standard, choose a straight trunk, and look at the graft union, avoid any with a strong bend/elbow as it can stand out visually. At the nursery pull out a few trees and look at them from different positions, and rotate the pots 360' to check the trunk from all angles.
