storage of Yacon

Barb starts with ...
I just harvested that one Yacon that I bought last year - it yielded 8.5kg of tubers and plenty of rhizome. What is the best way to store each of these? Tubers in potato bags or in breather bags in the fridge? Rhizomes back into pots of soil or hide them in sand for a couple of months?
We'll be back for more shopping in about 2 months when the new house & garden are ready to go.

If storing it is preferable that the rhizomes remain attached so there is no broken surface for mould /rot infestation. That could be a bit difficult.
