Would white beech Gmelina Leichardtii grow ok in the mid Blue Mountains? Also Koda - Ehretia Acuminata?

I don't think that Gmelina Leichardtii can survive there. I have tried to grow various species of Gmelina including Gmelina Leichardtii in Melbourne and none of them survived.

You should have a better chance with Koda as I think these are being grown on the south coast of NSW.
