Pandanus - Edible

Widely cultivated for use in Asian cooking and basket making. It has a nutty fragrance and is most commonly used in rice dishes or tied in a bundle and cooked with food. Also useful in flower arrangements. A low growing plant to 1m with long narrow blade like leaves and woody aerial roots. In tropical climates it can be grown as a marginal plant in dams and ponds, used as a bedding plant in tropical landscaping. Outside of the tropics, well worth trying as indoor plant in winter with a warm, sunny aspect. Allow the plant to dry out over the winter months.

Dragon Fruit - Zamorano

Striking crimson purple flesh and sweet flavour. The skin is red with dark red/maroon fins. Dragon fruit are beautiful night flowering cactus originating from Central America. Australian Round Lime

The round knobbly fruit, usually reaching 3.5-4 cm in diameter have a distinctive and recognisably citrus flavour, with a similar globular texture to the more commonly known Finger Lime. Also known as Dooja or Gympie lime. Occurs naturally on the fringe of lowland sub-tropical rainforests of southeast Qld, from Brisbane northwards. This slender tree can reach up to 15m in height and 6-8m in diameter with multiple trunks, making it the most vigorous of the native citrus. The round lime is suitable for including in cordials, sauces, marmalades and lime flavouring. The skin is very thick (up to 7mm) and has potential for culinary use, such as grating into spice pastes, or for candied peel and may also have potential for essential oil extraction.

The aroma of the fruits is similar to ruby grapefruit, and is perfect for cocktails and drinks, as well as cooking. Lemon Myrtle

The Lemon Myrtle occurs naturally throughout coastal Qld rainforests. It is a spectacular ornamental tree due to both its appearance and the superb fragrance of its flowers and leaves. The leaves and flowers are used in sweet and savoury dishes or as a refreshing tea. However as boiling or baking often reduces the flavour. The leaves are best added to the recipe at the end of the cooking process and either left to steam with the lid on or made into a sauce or dressing. It is usually the older and fully hardened-off leaves that are harvested for use. Enthusiasts describe the distilled oil from this tree as 'more lemony than lemon' and its used extensively to scent confectionery, perfumes, aromatherapy oil and food flavourings.

Indian Almond Tree

Also known as the Sea Almond or Tropical Almond, it is common throughout SE Asia, growing wild as well as cultivated for its striking features and tasty nut. A deciduous tree it can shed its leaves twice a year. In Autumn the leaves turn into colours of red, copper, gold. This tree has a characteristic pagoda shape because it sends out a single stem from the top center. When the single stem reaches a good height, it sends out several horizontal branches. It can get very large reaching 30m in ideal conditions. The fruits are almond-shaped and green turning brown to purple when ripe. The fibrous shell surrounds an edible nut. This shell helps the fruit to float as the seed is dispersed by water. The nuts are edible, taste very much like almonds, although it can be a challenge to remove the flesh from the hard stone. The Sea Almond can be eaten raw. Oil extracted from the dried nuts is edible and used in cooking. Recommended for Tropical climates as it is cold sensitive, but is wind, salt and drought tolerant.

Cinnamon Tree

Highly ornamental tree and the source of cinnamon spice. The beautiful red new growth is highly distinctive. The spice itself is the inner bark that is peeled from the branches after 2 years. Scrape the outer bark, then peel the inner bark, leave for a day so that the inner bark curls into cinnamon sticks as it dries. They are distinctive in the many layered quill they produce that, when crushed, will shard rather than snap. Cinnamon is a very elegant and useful aromatic, much kinder to the palate than other spices. It imparts a distinctively sweet flavour when used. On a hot summers day the fresh taste of grapes picked from your own vines can't be surpassed. Grown since antiquity, they are well known and loved and come in a large range of varieties. White grapes range in colour from pale yellow-green to light green, and black grapes from light red to purple-black. Grapes are categorized by their uses, either as a table grape or wine grape. Wine grapes have high acidity and are therefore too tart for general eating, but some, for example, Chambourcin are sweet if left to ripen well on the vine. The grapes listed below are suited to a wide range of climatic conditions. Those with disease resistance are good for humid, coastal conditions and others are suited to warm temperate and inland, more arid areas. Fruit can be eaten fresh, frozen for a cool icy snack on a summers day or dried for later use. It's not just their fruit that is delicious and nutritious, but their leaves as well. Blanch them in hot water and wrap them around a rice and herb filling for a delicious snack or platter filler.
