The main types now available in Australia are Arnold Blood, Maltese Blood and 3 Tarocco types, Ippolito,Meli and Rosso.
There are other older kinds, but these might be harder to find.
Arnold is a very attractive tree, and the fruit pigmentation can be variable over the same tree.
Have you thought of a mixed row of all types?
The best rootstock for colder climates is probably Trifoliata, but you should check locally about what suits your soil type
