Hi Mr Crackles Bilimbi (Averrhoa) is still largely an unknown fruit or plant in Australia except for migrants who came from the far and near east, to the Indian sub-continent up to the island of Seychelles. Mostly Bilimbi is used for cooking sourish and spicy dishes. In the Philippines where i grew up most backyard there have one or two Bilimbis growing. Sometimes we eat it raw with just a sprinkling of table salt. Its mouth puckering if you are not used to it. When there is a glut we usually sun dry or pickle them for later use when the season is over. Eating Bilimbi in any form is an acquired taste that is not easily overcome by the uninitiated hence the limited patronage here in Australia. Finding someone to grow them commercially even in a small scale is like trying to find a needle in a haystack unless you take yourself the challenge to grow it in sufficient quantity for market introduction. Mr crackles says... Hi fruitylicious I'm aware that it's not commonly use or know item. Have tried to no avail to seek the fruit here in Australia through suppliers. Finger limes once were an unknown item but these day's fetch top $. Like a lot of things, a market does not exist because no one knows it's out there. It's something I believe will or can be appreciated and used by professionals in the industry as time goes on. I'd be interested in getting small amounts and believe that in time people will appreciate the taste. Thanks for the reply and if you happen to know anyone where grows it I'd be most happy to get in contact with them. Fruitylicious1 says... Hi Mr Crackles I agree with your foresight. People need to be educated first about a certain product before it will become accepted by the community in your case bilimbi. Bilimbi is less tolerant of cold weather than its cousin the carambola fruit tree. If I'm only in the right place I will plant some averrhoa specie for testing the market. Anyway, if I smell something about bilimbi I will ring your bell.
