How do I find out what is the best deciduous fruit tree to about 2 meters? Would it be one of the plums?Live in Bay area of Brisbane

The 'best' tree really depends on what you like to eat and what "e;look"e; you are after.
Things like a santa rosa plum have a very low chill requirement (that you could enhance by removing foliage during the winter period). You may also want to consider a pollinator if you are after much fruit.
You can get these plums in dwarf form.
