Mango - Serinum Cherry Pie

Karen Tilley starts with ...
Do you have a big harvest of Blueberries, Mangos, Passionfruit (Lilikoi) and cherries. Here is a fantastic recipe for you:

Crust
3/4 lb organic cashew bits chopped
1 cup organic dates rolled in coconut
1/4 cup purified water
3 TBL spoons raw cacao
Sesame or Flax seeds if needed

Chop cashews in food processor and place in large bowl. Mix raw cacao powder in water until all the powder is dissolved. Place dates in with cashews and mix with a large spoon or fork. Pour cacao in to form a tacky crust. Place in pie pan and spread with fingers. If the mixture is too wet grind some sesame seeds or flax seeds and gently dust the crust.

Filling
3 cups Mango slices
1 hand of Apple Bananas
3-4 Lilikoi
Lot of Serinum Cherries

Peal and slice into bite sizes 5 or 6 mangos. Peal and mash a hand of apple bananas, if the peal is black the inside is perfect. Gently mix these together and spread into pie crust. Cut and scoop out lilikoi, spread on top of the pie filling adding a thin layer. Place serinum cherries on top of the pie. Options include fresh seasonal blueberries or strawberries.

Karen can you take a photo of an apple banana. I've seen all types upto 3kg but never an apple banana. Thanks hehehehe and what about a slice of pie to please sounds delicious. John

Hi John,
I am sorry but I am too busy to take a photo of an Apple Banana. To see one: please do a "Google Image" search for Hawaiian Apple Banana. When ripe they are yellow and about 5 inches long.

They are the most popular bananas sold here - by far.

Most folk won't eat any other kind. Unfortunately, we have deadly banana virus that may end up wiping out our entire banana crops.
