jakfruit etiquette says... The issue is probably not growing the vines, but you may consider own rooted vs grafted plants. The issue is are the bunches going to get thru without too much disease due to rain and humidity in the flowering and fruiting stages. Actually that includes foliage too. The type of trellis that favours air flow and ease of spraying for disease control, including either chemical or natural sprays could be a benefit. There is also info around about Shiraz and climate change in the Australian growing regions and various clones of Shiraz that perform differently. Whats the closest region to you where grapes are grown, what are they growing ? I'm not suggesting more than half a dozen plants.
