I would say right after you harvest the fruit. This gives it some time for new growth flushes before winter so you will still get fruit the following year.

Heres my Kensington Prides I picked a week ago smaller 2 weeks - just when im seeing Mexican Keitts at Woolies - you can have Melbourne Mangos out of season and they taste even better I think - well not bad for Melbourne anyway - the big one is the largest this tree has ever grown to date - had 8 others similar to the smaller cut one.
