Marcello starts with ... Here is some fruit I picked last wednesday. I had to pick the persimmon a little early to stop it from eaten by the local king parrots. Can anyone tell me what type it is? It is bright orange and I have tasted it - perfecto my favourite fruit!!

Tony says... The chemical that makes your mouth taste dry & numb is called Tannin (in soluble form). It is present in the astringent varieties. Fuyu is actually non-astringent so you can eat it when firm & ripen. Astringent varieties can also be pre-treated with ethanol or carbon dioxide to convert the soluble tannins into solidified form so you won't notice the dry mount sensation when eaten.
