What's the right spacing and care to grow them as a hedge in Brisbane? Also I saw some with pink flowers, which variety is that?

2m apart would be ok. You will need to trim them regularly to keep them short. Grow them from non-piney/tainted tasting fruit. Black and orange types taste better and some red types are better than others.

Black beauty is supposed to be good. I don't like them, they have that weird peppery solanum-like taste to them.

Forbidden Fruits has a grafted variety called "Grafted black" lol. It's marginally sweeter than my seedling red.
