Olives

Brenda s starts with ...
I've picked my green olives, had them soaking in water for 3 days, changing water each day, and they have developed a brown spot? Are they any good?

As far as ive done - I pickled green olives without alot of success - is after washing - start salt water brining changing every 2 or 3 days - colour will brown - the green olives you buy are done in a caustic solution and they stay green, but when ive done this they dont taste so good.
Now I just salt olives Black or Green and they taste amazing (green take longer of course but taste after a month) - give that a try - go to your Greek Deli and buy a few KGs of salt or if you know a friendly Butcher.
