Tyty starts with ...
I sprouted Eureka Lemon seeds... can i use that as a rootstock? I've heard Eureka Rootstock & Eureka Scion... are compatible? Anyone here know for sure??

Yes they should be compatible.
Eureka lemon may not be the best rootstock for you,
seedlings can do ok here in a hot dry climate, not sure how they will go in your area 2453 NSW. They might be ok in pots or on a rocky slope etc.
For your area Bush Lemon might be a better choice as rootstock.

Most citrus seem to graft adequately to each other. Bitter Orange/Poncirus is the default, as it's nearly bullet proof. Flying dragon variety if you want to dwarf the plant, regular otherwise.

Grafting compatibility can be thought of in the sense that the bud or graft takes on the rootstock and grows successfully. This is apparent fairly quickly.
Further to that their can be later or delayed incompatibility. The graft union can swell causing constriction of sap flow. Sometimes the graft can crack off. The rootstock can be too vigorous and overgrow the top scion. Virus can also be transmitted from the graft scion into the stock causing problems, or from leaves on the stock into the graft scion.
This can happen when the virus resistance of the graft and scion pair are different.
Rootstocks could be fully compatible in the first sense, but fail due to soil disease or drainage factors.
