I would urge you to protect this young healthy tree from the frost, once it is established it will be able to handle light frost but while it is young the frost could seriously set it back if or at worst it could kill your tree.

I'd be interested to hear how your sapote handles the winter in Victoria. We're in inland north-west NSW and I got one last spring to see how it would go. I've been babying it a bit (potted up a size and placed in a protected spot) and wasn't planning to plant it out into the garden until spring. We've had a few good frosts so far and it's been fine, while a few other things near it have been burnt a little.

Here on the Gold Coast the temp drops to about 5 in winter. My Black Sapote (grown from seed 7 years back) still drops most of its leaves in winter.

Just had a big frost and the black sapote did surprisingly well. I would say that my black sapote has the frost tolerance of a lemon tree.

How old is your tree and has it had any fruit? My tree in Mornington Peninsula was only planted in Dec. but is doing OK so far.
