If you just let this rootstock grow (don't graft another variety of plum on it), will it fruit? Is the fruit any good for anything?

Usually the rootstock is inferior to anything that it is grafted onto.

Although I haven't used the St Julians this is the general rule. Also roostock is used to vegetatively propogate so that your plant has vigor and disease resistance however the quality of the fruit is usually very poor.
