Buddha's hand are one of the oddities of the citrus family as unlike other well known citrus they're not eaten fresh. This fruit looks like an old shriveled hand with a thick uneven tightly adhered rind. Low on juice they can be acidic or sweet. Citrons are grown today for the specialty market, their prime use being as candied peel or for use in religious ceremonies. The Buddha's hand is such an interesting looking and fragrant fruit that it can be used to scent a room, if left on a kitchen bench or in the bathroom it will fill the space with a lovely aromatic citrus scent. Large, golden yellow, pear shaped fruit with a mild flavour. Excellent when preserved. The flesh becomes a beautiful dark red when cooked and the conserve, quince jelly, is one of the best. A very hardy small tree that thrives and bears well.

Extremely strong pungency that is akin to hot mustard, wasabi produces vapours that stimulate the nasal passages more than the tongue. Generally used as a sauce that makes sushi or other foods more flavourful by adding spice. Use the stem sparingly and finely grated. Grows naturally along stream beds in cool mountain rivers valleys of Japan. Challenging to grow in Australia. Requires cool, moist, shaded conditions to thrive. It takes about 18 month - 2 years for plants to mature, in the meantime use the leaves and the leaf stems in salads, curries and pickled accompaniments.

Jakfruit is a handsome evergreen tree, reaching a height of 8-15 metres and bearing the worlds largest fruit. Fruits can weigh up to 20kg. Strong scent to fruit skin, but it is deliciously sweet, with tropical flavours of banana and mango. It can be eaten fresh or dried. Very quick growing and usually starts fruiting in 4th year. A perfect start to a Food Forest in subtropical and even protected warm temperate regions, especially in spring and summer. Cincturing can help earlier fruiting.There is an old Sri Lankan proverb that says, with Jakfruit and coconut in your backyard you will never starve. This is because every part of the Jakfruit tree is useful. Unripe Jakfruit can be cooked with chicken, fish and eggs, and ripe ones can be eaten as is, or processed into drinks, jam, jelly or candy. The same applies to other parts of the tree such as the skin, leaves, flowers, wood and latex which have their own uses and benefits.
