Elizabeth starts with ...
My apricots develop stringy pithy texture when bottled or made into jam.
What could cause this?

The most common problems that I have found with these type of things are:
- the mixture you put them in when they are in the bottle will slightly denature it, all preservative will do this
- the denaturing of the fruit caused by the syrup/ jam contents and constituents will occur because fruits, especially stone fruits, will have some sort of chemical reaction. Not all preserves will come out the way they went in
