Chocolate Fruit

My black sapote has exploded with fruit this year after being in for about 5 years. I wasn't sure when to pick the fruit but 2 weeks ago I picked a couple of dozen of the larger sized fruit which were mainly an olive green colour and the ones that have softened so far have been delicious.
I noticed this weekend that a lot of the fruit remaining on the tree is smaller and more of a yellow colour. Advice please anyone.
Do I quickly pick any of the remaining olive green fruit? Are the smaller yellowish fruit just immature and going to turn or a sign of a lack of some kind of nutrient? The tree itself is powering - about 3 metres high and very bushey. Probably about 100 fruits still on the tree.

This sounds like they are just smaller fruit but they are ripening and I would guess that by now you have been eaten a fair few of these smaller fruits. With 100 fruits have you come up with any tasty recipes to us them up?

THe fruit is ready to pick when the calyx around the stalk lifts slightly from the surface of the fruit . It will still be hard , but ripen within a week . You can leave to ripen on the tree , but its messy picking them then
