If you are close to the coast, you really need low chill apples - Anna and particularly Dorset Golden are ideal.
If you are in the hinterland any low - medium chill apple is OK. Pinkabelle (similar to Pink ladty in looks and taste) is columnar which means it has one main trunk (about two metres and doesn't bush out. Otherwise dwarf granny smith, arkane, golden delicious, pink lady, lady Williams are all possible. Think about the fruiting times also to spread your picking season. Lady Williams may not ripen until June and Arkane is ripe Feb/March.
Finally to complicate things you need a pollinator for SOME varieties (means they flower at the same time, though will not necessarily be ripe at the same time). Orangepippin.com is a database that has listings of all (?) varieties with chilling/ pollinator requirements and fruiting times (just remember it is northern hemisphere so add six months

Tropic sweet and Dorset Golden are doing extremely well here, performing well better than Pink Lady, Ballerina, and a triple grafted tree planted over ten years ago. I'm on the coast, 1 hours drive north of Sydney.
