There are many Diospyros spp, its a very diverse genus. Hard to say how close yours are related. D.kaki can be grafted onto D. virginiana, and onto 1 or 2 other spp.
Citrus is commonly grafted onto the deciduous Poncirus trifoliata rootstock.
I haven't heard of the kaki/black sapote graft. Some unusal grafts succeed when some living branches of the stock plant are left to grow. There may be grafting techniques/styles that are better at overcoming incompatability.

Thanks for the info good to hear that deciduous / evergreen might not be as big an issue as I thought. I was only planing on grafting the black sapote because I have an existing persimmon and not enough space for a new tree. Thought I'd graft a branch not the whole tree. Just wanted to know if it was possible before buying a black sapote. Seems it might be.
