Growing apples - newbie

Merry starts with ...
I am interested in purchasing apple trees: live in Sydney/chill 600 hours. Must be dwarf trees.

Pinkabelle + pollinator is on my list. I am interested in trees, the fruit of which do not appear in the supermarket: i.e. Cox's Orange Pippin.

Secondly, I am concerned about pruning. It appears to be a complicated business.

So, does anyone have any pointers regarding pruning: web sites/literature etc.

I've been going through the Heritage Fruit Trees that have a good selection to choose from. At the time of writing Yalca web site is off line (due to updating?)

Has anyone had success with apples in Sydney,and what types?

Plus I would like to get a small Quince tree. Does anyone have any knowledge to share here. Thank you so much.
