manzanillo olives

Hillel-W starts with ...
I have a Manzanillo tree that's about 5 years old now (from Daleys!) and it's got quite a few little olives on it. We're so happy! They're about the size of the tip of my little finger now. Anyone have experience with turning them into delicious olives and what size to start from? Thanks in advance!!

Lots of Recipes via Google but best is just put in Pickling salt in a jar or if you have lots in an old pillow slip and drain into a bucket - Salt from a Greek Deli only $1KG - alot easier than brining.
