Pruning coffee trees in Sydney (forum)

My four K7 coffee trees from Daleys are now 2.5 metres tall and while they sulk a bit in winter appear to be thriving. They fruited well in 2017 as 3 year olds but only one tree has berries this year. Most branches did not have flowers. I know berries grow on new wood,of which there seemed to be plenty but perhaps I pruned at wrong time. Given cold-ish winters in Sydney, when is the best time to prune?
