Pruning Macadamia Bush Nut tree (forum)

MnM1 starts with ...
We bought a Macadamia Bush Nut from Daleys 4 years ago and planted it out 3 years ago. It has been slowly but steadily growing as single steam until the extreme heat last Oct killed the new growth at the top of the stem. It eventually recovered and started three side branches from that spot.
Since we wanted a bush sized plant rather than a tall tree, we are now wondering, if we can simply cut the stem about halfway to encourage it to shoot out to the sides.
On the other hand we don't want to kill it.
There is also a shoot coming off the main stem at ground level. We are sure this was supposed to be a seedling and not a graft and we have left that growth so far.

Can anyone advise, if it is safe to cut the stem half way? And secondly shall we let the ground level shoot growing or cut it off?
