rhubarb

Lesley starts with ...
Hi I am new to the veggie and fruit growing world. I have a rhubarb plant in the garden but I don't know how red the stalks have to be before you can pick them. I understand that rhubarb is poisonous?! Thanks

In Perth, a lot of the cultivars are green stemmed as the red seems to diappear as the varoetry aged.

Only the leaves are mildy poisonous. Pick and cook the stems at any stage.

According to www.rabarberkoken.nl, a well known Dutch website for cooking rhubarb, the stems are not poisonous. For the taste of the rhubarb however, it is best to cook them when they are red. The more red they are the sweeter they taste
