Tantalising Tejocotes!

Now is the time when not many other fruits are ripe for harvesting and cooking up some Mexican Hawthorn fruits to make Dulce de Tejocote. The fruit are cooked in syrup made from unrefined cane sugar called Piloncillo and a cinnamon stick in water. Rods or cones of Piloncillo can be readily bought online if you have a Mexican Hawthorn tree and are planning to make this succulent dish.

There are numerous recipes online all with slight variations. However I have written out the following recipe made from the 4 basic ingredients which I would like to share with yous. Tejocotes fruit make a delicious and tantalising dessert!

Tejecote Recipe
Ingredients
1kg Tejocotes fruit
1 cup of white sugar
1 Cinnamon Stick
1 rod Piloncillo

Method
1. Put Tejocotes in a large pot with 2 litres of water so that it covers half the fruit.
2. Cover the pot with a lid and cook 3 – 4 minutes. When it starts to boil remove pot from stove after 4 minutes.
3. Remove skin from each fruit while still hot and soft. After the skin is removed from all fruit, puncture each one several times with a fork. Also remove any excess stem.
4. Put 1½ litres of water in a pot and add sugar, half of the piloncillo, the cinnamon stick and 1 clove. One piece of Star Anise can also be added if desired.
5. Wait about 3 minutes until the water boils, then add all the Tejocotes and the other part of the Piloncillo. Cover and leave for 10 minutes, then some coffee flavoured sugar if required. Continue to simmer for a further 20 minutes with the lid slightly removed so it doesn’t boil over.
