Chestnut (Castanea sativa) does best with humid cool temperate climate usually in mountains.
Your best bet as far as Castanea go would be chinese chestnut (C.mollissima) , already in Aust., but hard to find.
But really what I'd be looking for to grow in Bris. or north of there would be the tropical relatives- Castanopsis spp. (Fagaceae).
many species in SE.Asia, PNG etc. as highland rainforest trees.
There are many 'chestnut alternatives' ie starchy edible seeds, thoughnot exactly the same.
some common examples are Jackfruit seeds, Bombacopsis sp./ Pachira spp.
That all being said, chestnuts are easy to grow from seed bought from supermarkets and can flower within 18 months from sowing (generally wont produce fr. for a couple of years.)
