Hi peetah,
Make sure that the mulch is not up against the trunk of the tree, is a good start.

Buy a product called Yates "Anti-Rot" and follow the instructions.

Give the tree 4 handfulls / sq. m of Gypsum, from the trunk, to just past the 'dripline'. (under the new mulch).

Hello Peetah, If you are using the Yates Anti-rot you can certainly still eat the fruit. The active ingredient of this relatively new product is phosphoric acid which is quite harmless to animals and plants and is actually found in soft drinks particularly cola drinks.
