I'm 99% sure the answer is 'no'.
However I *have* heard that you can still use them. In fact the Japanese use unripe apricots of a particular variety to make a liqueur.

And the famous Mrs. Beeton listed a 'Compote of Apricots' made with green apricots and sugar.
I've never tried either of these recipes, so I cannot tell you whether they are worth making.

I'm pretty sure when we buy apricots from the fruit markets they are the right colour but don't taste right for a few days. We put it down to the not being fully ripe

Lee, it may depend on how close to ripening they are. If they have a good colour they will ripen a bit, but not as well as on the tree.
I pick under-ripe apricots to make jam - it sets really well and has a lovely tart, fruity flavour. You can also cook a bit and freeze for pies etc.
