Hi Lisa-maree.
You can espalier most things, including citrus. You generally need some kind of lattice or trellis in place to tie down growth of plant to the 2D plane. You want to encourage lateral growth. I actually have a finger lime that has naturally grown very laterally, if you are interested you can contact me at **removed**
