Persimmon type (forum)

Marcello starts with ...
Here is some fruit I picked last wednesday. I had to pick the persimmon a little early to stop it from eaten by the local king parrots. Can anyone tell me what type it is? It is bright orange and I have tasted it - perfecto my favourite fruit!!

I think the Fuyu variety is a possible candidate but it is probably one of many non astringent types but its the only one I have seen available.

The chemical that makes your mouth taste dry & numb is called Tannin (in soluble form). It is present in the astringent varieties. Fuyu is actually non-astringent so you can eat it when firm & ripen. Astringent varieties can also be pre-treated with ethanol or carbon dioxide to convert the soluble tannins into solidified form so you won't notice the dry mount sensation when eaten. Alternatively, astrigent fruit is allowed to soften until fully ripen, a natural process to allow soluble tannins to convert into solid.
