If you grow plum trees from seed, what sort of crops do you get? Are they better grafted onto rootstock and what kind, will crab apple rootstocks be ok ?

Buy a grafted plum tree as a starter- and then just graft different varieties onto it. (Unless you're looking for a lot of trees- in which case- start with a grafted tree, get it to sucker and start taking cuttings off the rootstock to strike).

It'll take you a few years to build up a decent supply though.
