Israel is not really noted for pomelos and the climate is too dry and cold to have good quality fruit.Sydney also may be a stretch for good fruit with grapefruit doing way better.Vietnam and Thailand have the best ones and those with asian names usually taste better.

Israel does export pummelo to Europe, maybe grown in the mild costal belt.
Did you eat imported fruit in Australia?? Shouldnt be too hard to track the variety down, even google searching will probably find company info on the variety exports.
Was it red, pink or white fleshed?( or another color)
There are many types, but only some are ok outside the tropics. Many tropical types will grow well in other areas, but the fruit will be sour.
Probably best to id the var you like, and try to find it, or a close match that produces ok fruit in Sydney(not many choices) As Mike says, the best types are tropical, and it's hard for others to match up.

I picked up one of these fruits from Childers QLD a few days ago, White/ yelow flesh and very sweet.
Problem is there may only be one or two seeds in the large fruit(Not cut it yet)
Anyone know if they grow true or pot luck?
Im thinking if they can grow it up there I should be able to grow it here.
