Unlike the common green skinned varieties where the skin becomes very thin and hard to differentiate when biting into it. The Corella variety when ripe still has the sweet soft flesh but the skin remains hard and crunchy and it makes for a satisfying mouth feel with the crunchy tasty skin contrasting the very juicy sweet flesh. An attractive large pine tree that bears cones of edible nuts. These are considered a delicacy in Mediterranean style cooking, due to their sweet, buttery flavour. Trees can be expected to start producing cones from about year 6. But can take longer. Each cone holds about 50 nuts and 100 kg of cones holds about 20 kg of nuts. Grows best in dry cooler areas with excellent drainage. Trees can set nuts on their own, but cones may be poorly filled. Plant two or more to improve nut set.

Also known as the Makrut Lime. The oil has strong insecticidal properties. Kaffir lime rind is an essential ingredient in a Thai curry paste, a teaspoons of Kaffir lime rind is used in both red and green Kaffir lime gives the curry a very distinctive flavour. The leaves are added to the curry once it is cooking and can also be added when cooking rice.

The Lemon Myrtle occurs naturally throughout coastal Qld rainforests. It is a spectacular ornamental tree due to both its appearance and the superb fragrance of its flowers and leaves. The leaves and flowers are used in sweet and savoury dishes or as a refreshing tea. However as boiling or baking often reduces the flavour. The leaves are best added to the recipe at the end of the cooking process and either left to steam with the lid on or made into a sauce or dressing. It is usually the older and fully hardened-off leaves that are harvested for use. Enthusiasts describe the distilled oil from this tree as 'more lemony than lemon' and its used extensively to scent confectionery, perfumes, aromatherapy oil and food flavourings.
