Tina starts with ...
My main trunk has a failed flower stalk. Should I cut that trunk out, or will it try to flower again?
When I cut a trunk out, how far down do I need to go?

Ooh. This is an interesting case. I have personally never seen this before.
As for my answer:
Does the banana tree have any suckers?
If it does, and they are looking really good, then you should be okay to cut the main trunk down. About a foot from the ground is okay. If you don't think the suckers are ready to take over, then you can wait a month or two.

I know, very disappointed. Yes, 3 large suckers, I've been getting rid of the others to try to get it to flower since it's 2.5 years old now.

If I were you, I would cut the main stem down, careful not to damage the suckers.
These suckers will give you fruit likely within a year, if not, then within two years.
And in case you are wondering, you should keep the three suckers as they are, there is no need to remove any.
