Linda says... Hi "e;Bruce"e;, No it does not really change colour but you can tell when they are ripe by the fact that they are base upwards close to the stem when unripe but they 'droop' away from the branch when they are ok to pick. I always still check to see if they are a little soft as the riper they are the sweeter. After picking if you leave them til they look a little 'sad' the white part of the flesh will go a bit translucent and then they will be like jam inside.
