Flavour is highly aromatic and has been rated as superior by Chefs. Fruit is highly ornamental, with its shiny black skin and as a cut fruit, as it has a dark lime green pulp. Displays well as a garnish, with the juice vesicles popping out on cutting and the fruit splitting open wide. Its wide shape facilitates scooping out the pulp with a teaspoon. Rind colour is black/purple at optimum maturity and pulp colour is a dark yellow/green. Mean fruit size is 50mm x 25mm. It is a mid to late season variety but bears fruit all year round.

Scrape the outer bark, then peel the inner bark, leave for a day so that the inner bark curls into cinnamon sticks as it dries. They are distinctive in the many layered quill they produce that, when crushed, will shard rather than snap. Cinnamon is a very elegant and useful aromatic, much kinder to the palate than other spices. It imparts a distinctively sweet flavour when used. A highly ornamental tree that bears small red berries within its first year. Blossoming and producing all year round, the flowers are white and followed by small red fruit that is sweet with the taste of caramel. The trees are exceptionally attractive with long spreading branches that often droop down to the ground and soft weeping foliage. Trees are very fast growing and drought hardy once established. They can grow 5-10m in ideal conditions but respond well to being cut back so it is possible to keep them smaller than this making it easier to browse on the tempting little fruits. Panama berries will happily grow and fruit in large containers provided they have a good quality mix and a healthy layer of organic mulch to hold the moisture in. It is the ideal backyard tree if you have children as it is a lovely little shade tree as well as producing tempting little sweet treats.
