CANISTEL OR YELLOW SAPOTE

Botanical Name: Pouteria campechiana
Description

The fruit is round to oval and matures to a yellow-orange colour hence its other common name of 'egg fruit' and yellow sapote. The yellow flesh has a sweet earthy flavour and a meaty texture similar to a boiled egg. The fruit is delicious eaten fresh out of hand with a little salt and lemon juice added. Canistels are often added to sweet custards or made into delicious eggnog-like milk shakes by blending with milk.  The fruits are very rich, the flesh can be dried and ground into a powder which is than used as a flavouring for sweet desserts.

A slender and erect tree with cream coloured fragrant flowers. The fruit is round to oval and matures to a yellow-orange colour. The yellow flesh has a sweet earthy flavour and a meaty texture similar to a boiled egg. Seedling selection cropping in 4 years. Atzapotl is the Aztec name for the canistel. Atzamole is a dish which is like guacamole but with canistel.

Canistel  - Ross Sapote For Sale (Large)

Canistel - Ross Sapote

A seedling selection that is similar to a canistel but the fruit tends to be moister and less mealy than a canistel. They also tend to split open at the top like a flower opening when they fruits are fully ripe. The tree is slow growing and easy to control, once established they are drought tolerant. Called Eggfruit due in part to the texture of the pulp being similar to the yolk of a hard-boiled egg but the flesh is sweet like caramel.
