The Black Truffle originates in France, in the region of Perigord. It is very aromatic and is highly valued with chefs and restaurants. The vast majority of the truffles that are grown in Australia are this one. It is harvested typically from June through to the end of August. It has a black peridium (skin) and the glebra (fruit body) is black with thin white veins. The host tree is a Hazelnut seedling, or Corylus avellana which produce delicious nuts (though you do need a pollinator for nut production), the roots of the tree are inoculated with truffle mycorrhiza. In Europe, truffles thrive in nutrient poor, calcareous (lime) soils and a temperate climate. Therefore to establish a truffiere in Australia you will require an area with a similar climate, including rainfall & winter frosts, sufficient available water for drought proofing, and apply a great deal of lime to replicate the European soil types. They need cold winter temperatures with a few frosts. Hot summer temperatures for initiating truffle formation. Free draining soils, suitable for altering with lime. Sufficient rainfall or irrigation water.

Suitable for most regions of Australia, although it can be susceptible to damage from late frosts. The red shahtoot is ideal for growing in pots and containers due to it small growing habit and it is ideal for school gardens as it does not produce fruits that stain and the sweet fruits are very appealing to children. This variety is best suited to warm subtropical climates and does not perform well in temperate climate where it tends to drop their fruit.

It has deep green foliage that starts low on the smooth clumps which turn yellow as they are exposed to sunlight. Both the timber and the shoots are popular for construction and human consumption purposes. To ensure the safe consumption of bamboo shoots, it's important to boil them before use. This process helps to remove the cyanogenic glycosides produced by the plant as a defence against herbivores. It's advisable to boil for at least 20mins and change the water once or twice during boiling to ensure all toxins are eliminated
